FAQ
Why is ume (Japanese apricot) considered as an “alkaline food” even though it tastes so sour?
Ume’s sourness comes from its various organic acids, especially from citric acid, which has a very positive acidic taste. Ume also contains alkaline minerals such as potassium, magnesium, iron and calcium. Ume has a higher content in these organic acids and minerals compared to other fruits, so it is known as “the king of alkaline foods”.
Why select unripe ume for extraction?
Ume is most sour when it is unripe, which means its citric acid content is at its peak. Using unripe ume for extraction ensures the efficacy of the concentrate.
What are the benefits of Barley Grass?
The SOD enzyme (Superoxide Dismutase) contained in barley grass is a powerful antioxidant. It can protect the cells from gene mutation. Barley grass is also rich in dietary fibres, chlorophyll and vegetable protein that help to detox the body and to maintain a balanced diet.
